Grilled Rack Of Lamb served With Blueberry Sauce, accompanied with Garlic Potato and Vegetables |

Ingredients 800 gm Lamb Rack 2 kg Potatoes 400 gm Unsalted Butter 400 gm Fresh Cream 80 gm Garlic mince 200 gm Carrots 200 gm Cauliflower 200 gm Broccoli 200 ml Cooking Oil 4 cups S&W Blueberry 4 cups Chicken Stock Salt and Pepper (Serves 4 persons)
Method
Lamb Rack 1. Trim out fat from the edge of the lamb rack. 2. Season the lamb with salt and pepper. 3. Heat up the grill or a cooking pan and add cooking oil. 4. Grill the lamb to your liking
Garlic Potato 1. Peel the potato skin off and slice to thinly. 2. Season with salt, pepper and the garlic mince. 3. In a baking tray measuring 30 cm x 30 cm x 3 cm, arrange the potato and top with fresh cream and unsalted butter. 4. Bake the garlic potato in an oven at 180 C for about 1 hour
Blueberry Sauce 1. Boil the blueberry and the chicken stock together. 2. Reduce the sauce to 1 cup and add salt and pepper to taste. 3. Thicken the sauce with corn flour and add 1 tablespoon of unsalted butter.
Vegetables 1. Clean and wash vegetables of your choice. 2. Cut vegetables to the size of your liking. 3. Boil water and add vegetables. 4. Season to taste with salt, pepper and butter. 5. Bring to a boil and cook for 5 minutes over medium heat except the broccoli which should be added in the last minute.
To Serve 1. Cut the potato dish into squares on serving plates. 2. Arrange the vegetables on top and pour in the blueberry sauce. 3. Lay in the lamb. 4. Garnish with julienne vegetables (red chili, carrots, cucumber and spring onion).

Annual Christmas Charity Light-Up Dinner at Hard Rock Hotel Pattaya. |

Hard Rock Hotel Pattaya will be holding its Annual Christmas Charity Light-Up Dinner on Friday, 1st December, 2006 at the Hall of Fame ballroom. The non-profit event aims to raise funds for The Chaipattana Foundation and will be held in partnership with Pattaya Mail – the Eastern Seaboard’s first and best English-language newspaper.
Now into its fifth year, the Christmas Charity Light-Up has always been fun-packed but very meaningful. The event is highlighted by the ceremonial lighting of Hard Rock Hotel’s themed Christmas tree, which changes motif each year, followed by pre-dinner cocktails and then a gala dinner at the Hall of Fame from 6:00 to 10:00 p.m. with unlimited beverages.
As in previous years, major government officials, dignitaries and VIPs of Pattaya and neighbouring communities will be present on this special occasion to celebrate the spirit of giving.
Initiated by the King of Thailand, His Majesty King Bhumibol Adulyadej, The Chaipattana Foundation was formed to support implementation of Royally-initiated projects particularly that of social and economic welfare activities to improve the quality of life of people in rural areas, enabling them to become self-reliant.
Hard Rock Hotel Pattaya invites you to join in this year’s Christmas Charity Light-Up and add your support in the form of a cash donation, ticket purchase of THB18,000 for a table of 8 persons or THB2,400 per person for the event on Friday, 1 December 2006 or donating a prize for an auction which will be held during the event.

Rock N Roll Suicide |

Hard Rock Hotel Bali, the leading entertainment hotel in Bali, held their annual Halloween Party….”Rock N Roll Suicide” on Tuesday, 31st October 2006
The fright show was held at the Centerstage which was transformed into a creepy haunted cemetery with grave stones of past Rock N Roll Stars, Elvis Presley, the King of Rock N Roll, Jimi Hendrix, and Jannis Joplin.
At 8.30 pm, the crowd was rocked with performances by Escape Band, a deadly “Zombie Nurse Show” and a bloodthirsty, “Vampire Freak Show”. The ghoulish show got spookier with the “Back from the Dead Show” that sent all into a trance.
The successful event was sponsored by Bintang Beer and Absolut Vodka. |

Concorde Hotel Shah Alam..... I am writing to commend your team on their excellent performance during my recent event last week. I would like to mention a few people in particular: 1. Margaret Lindblom – she was on call the whole time, and solved a last minute crisis with the projector immediately. Was present at ballroom during set up the night before and morning before event. 2.Siti Hanee – handled all planning well, accommodated most requests, arranged ballroom to be more “child-friendly” ie: lower buffet tables, rehearsals for children etc. 3.Nursham & Azmi – were extremely helpful and polite throughout set up the night before and morning. Accomodated last minute requests. Effectively communicated our needs to the rest of the team so that there were no hiccups during event. 4. There was also an excellent technical guy who was spot on with spotlights and music. I think his name was Zaini. 5. The Artistic team was also very helpful, decorated our partitions beautifully. Flowers and overall décor was also very nice, as many of our guests commented. I notice that all levels of your staff generally know how/who to call when a client requests for something. I was impressed that help came so fast. Due to your staff’s efficiency and communication with our team, we were able to clear the ballroom, as requested to accommodate another wedding that evening. We hope the same team will serve us next year, as we will definitely be repeat customers of Concorde Hotel if your service continues to be this efficient. - Jelita Rubina Kayani, Malaysia 16 September 2006
