The salt crust seals in the juices. Red talapia or siakap fish covered with thick salted crust is baked to perfection. Garlic, shallots and spring onions are stuffed together as the filling whilst two other ingredients, salt and egg white are combined together as the salted crust. The fish is then wrapped in aluminium foil and oven-baked until cooked.
